Primary bowl
Freshly cooked tridoshic kitchari
Light finish
Soupy kitchari bowl with ghee

Sattvik Breadmaking: Yeast-Free Flatbreads
Commercial breads often rely on chemical yeast, maida, and preservatives that create heaviness and Ama. Classical rotis are unfermented, unleavened, freshly prepared, and served hot.
Fresh flour base
- Whole wheat (Atta)
- Finger millet (Ragi)
- Pearl millet (Bajra)
Warm digestive water
- Ajwain (carom) infusion
- Or cumin (Jeera) water
Unfermented knead
- No yeast
- No preservatives
- Cook immediately
-
1
Freshly milled grains
Prefer whole atta, ragi, or bajra. Avoid pre-packaged refined flour.
-
2
Infuse digestive seeds
Knead with warm water steeped in ajwain or cumin to prevent heavy grains from causing distress.
-
3
Freshness rule
Knead before the meal and cook at once. Overnight refrigerated dough turns Tamasik—dull and heavy.
